4 large green pepper (you can also use red or yellow too)
1/2 pound ground sirloin extra lean -
7% fat
1 cup chopped onion
1 teaspoon garlic powder
16 ounces tomato sauce
3 cups cooked barley
1/4 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon pepper
Slice the peppers lengthwise and cut off the top of the peppers; remove the
seeds. In a large pot, blanch the peppers in boiling water for three minutes.
Drain and rinse in cold water; set aside. In a skillet spray coated with a nonstick spray,
cook the ground sirloin and onion until the onion is tender and the beef is done.
Stir in the tomato sauce, garlic powder, barley, thyme, salt and pepper; heat
through. Spoon into the peppers; place in an ungreased 8 inch square baking
dish. Cover and bake at 350° for 25-30 minutes or until the peppers are tender and
the filling is hot.
Serving Ideas : Serve with warm French bread and an
additional vegetable
