  24   pieces  Jumbo pasta shells - cooked as  directed
   1   large  onion -- diced
   1   package   frozen spinach -- chopped(thaw before using)
   1    8 ounce    fat-free cream cheese
   2    cups   fat-free mozzarella cheese
   2    cups   cheddar cheese reduced fat -- shredded
  1   cup   fat free cottage Cheese
     1/4  cup   Parmesan cheese

   1    large   egg -- beaten  
    1/4  teaspoon   salt
 
    1/4  teaspoon   pepper
 
  3   cups  marinara sauce -- (try Kathie's Marinara sauce)


  Sauté onion in a non-stick pan with a bit of chicken broth or white wine.  In a large bowl combine onion, spinach, cream cheese and egg.  Stir well.  Add  the salt,  pepper, 1 cup of the mozzarella, all of the cheddar, cottage, and parmesan cheeses - mix well.  Using the pastry bags, place the cheese mixture inside.  Stuff the shells and arrange in a non-stick spray coated baking dish.  Spoon the sauce over the shells and bake at 350° for about 40 minutes covered.  Uncover and sprinkle the remaining Mozzarella cheese and bake until melted.  


  Serving Ideas : A romaine lettuce salad and butter free garlic bread..mmmm.


Notes :  To make this recipe easily, you will need to purchase some disposable pastry bags. This is one of my favorites.  This can be served up as a casual, intimate or fancy meal.  I dare anyone to guess that this is low fat!
