   1 1/2  cups  chopped onion
   2    bunches  fresh spinach -- chopped into 2 inch pcs
   1   bunch   green onion -- chopped
     1/2  pound    feta cheese -- crumbled
   1   pint   nonfat cottage cheese  
  3   tablespoons  Romano cheese

   3   tablespoons   parmesan cheese
   2   cups  99% egg substitute
     1/2  cup   skim milk

     1/2  cup     cream of rice
   1   pound   filo
     butter flavored non-stick cooking spray


  Preheat oven to 350°.  Saute the onions in a skillet coated with nonstick spray until softened.  In a bowl, mix the spinach, green onions, feta cheese, cottage cheese, romano, parmesan, eggs, milk, and cream of rice. Spray coat a 10x15 inch pan with Pam, and layer half the filo on the bottom of the pan a sheet at a time, lightly spraying each sheet with the Pam.  Spread the filling on the top layer of filo. layer the remaining pieces of filo on the top, spraying each sheet with the nonstick cooking spray.  Score the top in lengthwise strips.  Bake for 1 hour, or until the top is brown.  Cool, and cut the lengthwise strips all the way through, then cut into squares and serve.  Serve warm.  



Serving Ideas : Serve with a roasted leg of lamb

Notes :  Takes a bit of time to create, but is it worth it!  This is wonderful, and makes a delicious entree' for a brunch!
