4 chicken breast halves without skin
-- either broil, bake or grill till done
16 ounces fusilli -- prepared
as directed on package
1/4
teaspoon pepper
2 teaspoons sugar
3 tablespoons green onion --
sliced thinly
1 tablespoon lemon juice
2 tablespoons brandy (or a light
fruit flavored brand such as pear)
1 tablespoon Dijon mustard
14 ounces chicken broth
2 tablespoons cornstarch
2 tablespoons water
1 tablespoon
parsley -- dried
Prepare the chicken either by grilling, baking, broiling, or boiling if you like.
Meantime, as the chicken is cooking, mix the broth, mustard, lemon, brandy, pepper and
sugar. Heat to near boiling. Mix the cornstarch and water to make a
paste, use this to thicken the sauce to your liking. Add the parsley and onions.
Place cooked chicken over prepared noodles, and pour the sauce on top. Serve
immediately.
Notes : Serve over pasta or rice, and top with some parmesan for
something different. Try Fusilli pasta - it's great!
