14 ounces tomatoes, canned -- crushed
15 ounces tomato sauce
15 ounces kidney beans, canned
1/2 pound frozen corn
1/2 pound frozen peas
1/2 pound frozen green beans
1/2 pound baby carrots -- sliced or whole
1 stalk celery -- diced
1 medium onion -- diced
14 ounces lite smoked sausage -- diced
1/2 cup barley
cup water
8 cubes beef bouillon
1 teaspoon garlic powder
1/8 teaspoon cayenne
Combine all ingredients in a large pot and bring to a boil. Reduce the heat, cover and
simmer for about 1 hour or until the barley is done. Check for thickness, and if too
thick, you may want to add a bit more water.
Notes: This is a meal all in itself. Very hearty and filling. A great winter's meal, and so very easy to make.
