     1/2  cup  chicken broth
     1/2  cup    orange juice, from frozen concentrate -- undiluted
     1/4  cup   soy sauce
   2   tablespoons   cornstarch
   2   tablespoons   brown sugar
   2   tablespoons   minced garlic
     1/2  teaspoon    ground ginger
   8  ounces   chicken breast, no skin, no bone -- cut into 1/8  strips
   4  ounces    bean sprouts -- (optional)
      4  ounces    red pepper -- cut into 1/8" strips
   4  ounces    broccoli flowerets
   4   ounces    snow peas
   4  ounces   water chestnuts, canned -- sliced   
   1/2  cup    green onion -- thinly sliced
 
    1/4  cup    chopped peanuts -- optional

2 cups cooked rice


Combine the first 7 ingredients in a bowl; stir well with a whisk, and set aside. Prepare the noodles; drain and rinse; set aside. In a large skillet coated with a nonstick spray, cook over a medium-high heat the vegetables, except for the green onion for about 3-5 minutes.  Add the chicken and green onions and stir fry an additional 3 minutes or until the chicken is done.  Add the broth mixture and cook 1 minute or until thick; stirring constantly.   Spoon rice onto plates and spoon the chow mein on the rice; garnish with the peanuts.


Notes :  Chinese anyone?  Don't order out...stay in tonight and enjoy this really tasty dish.
