
1 medium onion -- chopped
1 medium red bell pepper -- chopped
1 teaspoon salt
1/3 cup red wine vinegar
2 tablespoons Worcestershire sauce
3 tablespoons brown sugar
1/4 teaspoon allspice
1 medium mango -- cut into chunks
1/8 teaspoon cayenne
pepper
In a skillet sprayed with a nonstick spray, cook the onion, red pepper and salt
until softened. Stir in the vinegar, brown sugar, Worcestershire sauce and allspice
and bring to a boil. Simmer mixture for 1 minute and cool slightly. Spoon the
mixture into a blender and add the mango and cayenne pepper; blend until smooth.
Serving Ideas : Tastes great on chicken, pork and firm fish like
swordfish
