4 ounces pork tenderloin
4 ounces veal sirloin
3 slices white bread
slices -- fresh crumbs
1 teaspoon dried parsley --
chopped
1 teaspoon dried sage
1/2 cup 99% egg substitute
1 teaspoon nutmeg
salt and pepper -- to taste
grated lemon rind -- 1/2 lemon
Either mince the two meats very fine, grind them, or use a food processor to grind.
Combine the meats, bread crumbs, lemon rind, nutmeg, parsley and sage. Season with
salt and pepper. Add the eggs and mix well. Form the mixture into patties and fry in
a spray coated pan for about ten minutes, turning a few times.

Notes : I tried this with sausage casings, then barbecued
them. They turned out great.
