1 pound ground turkey breast --
cooked until browned, crumble
14 ounces fat-free refried beans
14 ounces enchilada sauce
2 1/2 cups lowfat Mexican 4 cheese (if not available-lowfat cheddar)
6 ounces Mexican rice -- prepared
as on package - do not add butters!
6 each flour tortillas - taco
size
Preheat oven to 325°. Brown the turkey. Mix all but 4 tablespoons of
the the enchilada sauce together with the ground turkey.
In a spray coated 8x12 baking pan, spread 2 tablespoons of enchilada sauce.
Lay two tortillas side by side and spread all of the bean mixture on top. Spread the
other 2 tablespoons of enchilda sauce just for moisture. Sprinkle 1/3 of the cheese
on top. Next layer repeat tortillas, and spread all of the rice. Repeat
cheese. Last layer repeat tortillas, spread the turkey mixture and sprinkle with
rest of cheese. Bake for 30-40 min, check after 30 to see if done. Cover
and let sit for 10 minutes before cutting. Top with fat free sour cream if desired.
Serving Ideas: It's a bit spicy, so serve with a large
glass of cold skimmed milk.
Notes : If you like onions, try dotting some on top of the bean layer. You'd never think you were watching your fat. This is enough by itself. Mmmmmm!
