       1/2  pound   eye of round beef lean only -- sliced very thin
     1/2  cup   chopped onion  
       1  packet  artificial sweetener

   2   tablespoons   cornstarch
2   teaspoons   beef bouillon -- granules

        1/2  teaspoon   celery seed
     3/4  cup   water
     1/2  cup   cider vinegar
   1   pound   potatoes -- cooked and sliced
   6   ounces  fresh spinach -- cleaned & torn  


In a skillet sprayed with a nonstick spray, stir fry the beef quickly for about 2-3 minutes, or until the meat is medium-rare.  Take off the heat, and cool. In a small saucepan, stir together the sweetener, cornstarch, bouillon, celery seed, water and vinegar.  Heat until the mixture is bubbly and thickened, stirring constantly. In a large microwavable bowl, add the potatoes and meat;  pour the sauce on top.  Heat for about 1- 2 minutes in the microwave.  Take out of the microwave and add the torn spinach; toss lightly till coated.  Serve immediately.  


Serving Ideas : Just serve as it is...warm and delicious!

Notes :  I tried this with pasta instead of potatoes too.....it is just as good!
