
7 cups baking potatoes -- non-peeled
and cubed
8 cloves garlic -- peeled
1/2 cup low fat buttermilk
1/4 cup Parmesan cheese
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons dried chives
Place the potatoes and the garlic in a large saucepan. Cover with water and bring to
a boil. Reduce the heat to medium and cook for another 30-40 minutes, 10 minutes
before done, add the chives. Return them to the pan and add the remaining
ingredients; beat at a medium speed with a mixer (you can hand mash if you like) until
smooth.
