   6    medium  tomatoes -- peeled & quartered  (about 3 pounds)
   1   tablespoon  salt
   1   teaspoon  whole allspice

   1   teaspoon   whole cloves
   1    stick   cinnamon
   2   cups   onion -- finely chopped

   5   packets  artificial sweetner
   1   cup  celery -- chopped
   1 1/2  cups  white vinegar
   2  tablespoons   brown sugar
   2  medium  apples -- peeled & quartered    (Rome preferred)
   1   medium  pear -- peeled & quartered  
  1   can   sliced peaches -- light syrup & drained



Place a colander in a medium bowl.  Place the tomatoes in the colander; sprinkle the salt over the tomatoes.  Cover with plastic wrap and refrigerate for 12 hours.  Discard the liquid. Place the cinnamon, allspice, and cloves on a small piece of cheesecloth.  Tie together the corners of the cheesecloth , then  tie a piece of string around that to secure well. Combine the tomatoes, brown sugar, artificial sweetner, cheesecloth mix, and the rest of the ingredients together in a Dutch oven or large pot.  Bring to a boil, then simmer over a medium heat, uncovered for about 1 1/2 hours, stirring frequently.  Discard the cheesecloth pouch.  Makes around 7 cups. Place in a covered container, and store chilled up to 1-2 weeks.

 

Serving Ideas : Serve on any beef, like hamburgers instead of ketchup

Notes :  Pretty bizarre looking, huh?  But wait till you taste it!  Just great!  A wonderful fall recipe.
