fat-free flour tortillas soft taco size
9 ounces cheddar
cheese, low fat -- shredded
1 package burrito seasonings
9 ounces top round steak
1 cup salsa --
chunky - your choice
4 ounces tomato
paste
1 cup water
1 small onion

In a medium pot, brown top round - do not use anything for browning. Cover with
water until 1 inch above the meat and add 1/2 Tbs. Burrito Seasoning. Cover and
simmer for about three hours or until water evaporates, and beef shreds. When the beef is
almost done, in a medium pot add salsa, tomato paste, 1 cup water, onions, and the rest of
the Burrito Seasoning. Cook till heated. Place 1 ounce each beef, and shredded
cheese. Roll, place seam side down in a baking dish lightly coated with a non-stick
spray. Pour tomato mixture over the tortillas and bake at 350° for 30-40 minutes.
Top with non fat sour cream if desired
Notes : These are simply delicious. Serve with refried beans and Mexican
rice on the side.
