1/2 cup low sodium soy
sauce
1/4 cup sherry --
medium-dry
2 cups water
1/2 teaspoon dry chicken broth mix
2 tablespoons firmly packed
brown sugar
1 tablespoon ground ginger
8 ounces chicken breast
-- cut in strips
2 tablespoons minced garlic
2 tablespoons cornstarch
2 tablespoons water
In a small bowl combine all the ingredients except the chicken, cornstarch and water
and stir until the sugar is dissolved. In a large sealable plastic bag add the
marinade and the chicken. Marinate for 30 minutes to 4 hours (it depends on how you
prefer it-I like the 4 hour version). Either grill the chicken, broil it, or pan fry using
a non-stick spray until it is done - about 3-4 minutes on each side. Cook the
marinade in a small pot and bring to a near boil; mix the cornstarch and water to make a
paste and thicken the marinade. Drizzle this on top of the chicken.
Serving Ideas : Serve with steamed Broccoli sprinkled with
sesame seeds
Notes: Try is a very tasty chicken dish. You can
also use it on steak too as shown in my picture.
