In a large skillet, spray with a non-stick spray; heat and saute the onion, apple, and
chicken for 5-6 minutes, stirring constantly. Mix in the curry powder, preserves and
coconut; cook for 1 minute. Stir in the non dairy creamer and heat thoroughly.
Combine the sauce with the pasta and toss immediately with the cheeses and walnuts.
Sprinkle more coconut on top of each serving if desired.
Notes: Another one of my husband's favorites. He's a curry lover, and this was a great hit with him. You can also serve this cold as a great side dish or entree'.
