  12   ounces pasta - dry -- your choice     (Cook as directed on package)
     1/3  cup  diced onion
     4 small green apples -- chopped
   8   ounces   chicken breast, no skin, no bone -- cut in thin strips
   2   teaspoons  curry powder
   3   tablespoons   walnuts -- chopped
   3   tablespoons   coconut -- flaked
   4   tablespoons light apricot preserves

  12    ounces  fat-free liquid non-dairy creamer
     1/4  cup   Parmesan Cheese
     1/4  cup  Romano Cheese

   Salt -- to taste


In a large skillet, spray with a non-stick spray; heat and saute the onion, apple, and chicken for 5-6 minutes, stirring constantly. Mix in the curry powder, preserves and coconut;  cook for 1 minute.  Stir in the non dairy creamer and heat thoroughly. Combine the sauce with the pasta and toss immediately with the cheeses and walnuts. Sprinkle more coconut on top of each serving if desired.  

 

Notes:  Another one of my husband's favorites.  He's a curry lover, and this was a great hit with him.  You can also serve this cold as a great side dish or entree'.
