8 ounces evaporated skim milk
2 envelopes unflavored gleatin
2 packets artificial sweetener
2 cups fat-free liquid non-dairy creamer
4 teaspoons
instant coffee granules
1/2 cup coffee liqueur
Pour the evaporated milk into a large metal bowl; chill in the freezer till ice
crystals form areound the edges.
Meanwhile, in a medium saucepan, combine the sweetener and the gelatin. Add the
non-dairy creamer and coffee crystals; stir well. Cook the gelatin until
dissolved. Transfer to a very large bowl. Cool to room temperature. Stir
in the coffee liqueur and chill 10-20 minutes or until partially set, stirring
occasionally and watching carefully. Remove from the refrigerator.
Beat the cold evaporated milk with an electric mixer on
high speed until stiff peaks form and the mixture triples..about three minutes.
Gently fold into the coffee mixture. Spoon into dessert dishes. Cover and
freeze for 4-24 hours...or until set.
