1 cup corn flake crumbs
4 tablespoons Parmesan cheese
2 teaspoon seasoned salt
8 dashes cayenne pepper
1 teaspoon Italian seasoning
2 teaspoons garlic powder
1/2 cup liquid egg substitute
Non-stick spray
1 pound chicken breast,
no skin, no bone -- cut finger size (Or Use Chicken
Tenderloins)
In a large bowl mix the corn flake crumbs, Parmesan cheese, seasoned
salt, cayenne pepper, garlic powder and Italian seasoning. Mix well. In
another bowl pour in the egg substitute. Add a few finger slices of chicken at a
time to the egg substitute. Coat well. Dip a piece at a time into the crumb
mixture and coat well. Layer on a spray coated baking sheet.
Spray lightly with the nonstick spray over the top of the chicken.
Bake at 350° for 35-40 minutes or until done, turning once after 20 minutes.
Serving
Ideas : Serve with my Crusty Garlic Bread and with either spaghetti sauce or lowfat/nonfat
ranch dressing for dipping the chicken.
