2 chicken breasts, no skin, no bone
2 slices fat-free
Swiss cheese
4 slices ham - extra lean
slices
1 large egg white
1 tablespoon skim milk
1/2 cup corn flake crumbs
1 tablespoon seasoned salt
Pound each chicken breast until it is about 1/4 inch thick; make sure that the
chicken is flat enough and also large enough to fold completely. Place one slice of
cheese in two slices of ham (you may have to cut the cheese to make smaller)and
place in chicken breast. Repeat with other chicken. Fold the two
shortest sides together, and the fold over the longer sides over those. Hold in
place by toothpicks. Lightly beat by hand the egg white and milk. Place the corn
flake crumbs and the seasoned salt in a bowl and mix. Brush the chicken with the egg
white, and roll in the crumbs till well coated. Place on a baking sheet lightly
coated with a nonstick spray and bake at 425° for about 35-40 minutes.
