8 ounces chicken breast,
no skin, no bone -- cooked and cubed
3 cloves minced
garlic
1/2 cup chopped onion
1 cup Cream of Chicken 98% fat free soup
2 cups chicken broth
1/2 cup pearl barley
1/4 teaspoon salt
1/8 teaspoon pepper
2 cups frozen corn
In a medium sized bowl mix together well, all the ingredients. Transfer the
mixture to a nonstick coated 2-qt casserole dish. Cover and bake at 350° for
1 hour. Remove cover and bake an additional 10-15 minutes or until the barley
is tender and the corn is heated through.
Serving Ideas : Serve with warm rolls
