cups all-purpose flour -- unbleached
1 Tbs.
baking powder
1/4 cup onions -- finely
chopped
1
cup cheddar cheese, low fat -- shredded
1/2 cup cured dried beef
slices -- cut in small pcs
1 Tbs. sugar
1 cup fat-free sour cream
1/4 cup water
Stir together the flour, baking powder and sugar; stir in the beef, 1/2 cup of the cheese,
and the onion. Fold in the sour cream and the water until the particles cling
together. Turn out on a lightly floured flat surface, and knead for about one
minute. If the dough is too sticky, add some more flour and work it in.
On a stoneware baking brick sprinkled with cornmeal, pat the dough into a circle about
3/4 inch thick. Cut into 8 wedges separating them slightly
allowing for room to rise. Bake in a 400° oven for 20 minutes, or until light
brown, then sprinkle with the remaining cheese. Continue baking until golden brown
and cheese has melted...about 5-10 more minutes. Serve very hot.
Serving Ideas : I served this with packaged beef gravy for
dipping and a side of noodles & beef gravy. It was wonderful!
