   4     medium  pears -- peeled & diced
   1   cup   dry champagne

   2    tablespoons   lemon juice
     1/3  cup  sugar
     1/2  teaspoon  ground ginger
 

Combine all the ingredients in a heavy saucepan and bring to a boil.  Reduce the heat and simmer 10 minutes or until the pears are tender.  Pour into a blender and puree.  Pour into a 9 inch square pan and freeze for about 2 hours.  Spoon back into the blender and blend until smooth; pour into a container and freeze until hard.



  Notes:  Very elegant.  Try this delicious recipe on some special dinner guests.
