cups fat free Cottage Cheese
1/4 cup dried chives
1/4 cup green onion -- sliced
32 ounces 99% fat-free egg substitute
1/2 teaspoon salt
1/4 teaspoon pepper
8 lasagna noodles --
cooked 6 minutes, drained
5 cups frozen hash brown potatoes
6 ounces ham, extra lean, boneless -- cut in
small cubes
2 packages sausage ,
lite -- cooked and sliced
8 ounces fat
free mozzarella, shredded
4 ounces Monterey Jack cheese
lite -- shredded
8 ounces Muenster
cheese , lite -- shredded
Combine cottage cheese, chives and onions. In a large skillet, spray lightly
with a non-stick spray. Pour entire carton(s) of egg product in pan, cook and stir
continuously on medium heat until eggs are scrambled. Set aside eggs.
Lightly spray a baking dish with non-stick spray, and lay four noodles into pan. Top
with 1/2 of the hash browns, scrambled eggs, sausage, and 1/2 of the cottage cheese
mixture. Cover with the Monterey Jack and half of the mozzerella cheese.
repeat layers with the remaining noodles, hash browns, ham and cottage cheese
mixture. Top with the Muenster and the remaining half of mozzerella cheese.
Cover and chill overnight. Remove from the refrigerator 1/2 hour before
baking. Bake uncovered at 350° for 45 minutes, or until cheese is a golden
brown. Broil top of lasagna if you want cheese to get a deeper brown. Let
stand for 5 minutes before cutting.
Notes : This a delicious
breakfast treat....I get many requests for this one over and over. Serve this with
my Country Gravy for an outstanding meal that everyone will love.
My brother Chuck really like this nix the onions, so if you are not an onion fan, take
them out!
