    16    ounces    top round steak -- boneless  
15    ounces    fat-free refried beans

   8    each    flour tortilla 98% fat free burrito size
8    tablespoons   fat-free sour cream
   6    ounces    tomato paste
   1   small    onion -- chopped

   1   medium   tomato -- sliced
   9 1/4  cups   water
  16   ounces    fat-free cheddar cheese -- shredded
   1    package    burrito seasonings
         lettuce -- shredded
   1    small    onion -- diced
            salsa, -- use as garnish  

In a medium non-stick pot, sear steak until it is good and brown.  Cover with 8 cups of water, bring to a boil.  Reduce heat to medium/medium-low.  Simmer for around 3 hours until water is evaporated and steak can be shredded.   In another small pot, blend beans, 1/4 cup water and chopped onion.  Simmer about 30 minutes - check often and stir.   In another small pot blend tomato paste,  Burrito Seasonings and 1 cup water.  Simmer about 10 minutes or until sauce is slightly thick (add more water if needed).    Place two tortillas together, overlapping one tortilla to make a slightly larger size.  Place 1/4 of the bean mixture, steak, tomato and cheese on top.  Roll and fold.   Spoon sauce on top of burrito and add 2 tablespoons sour cream on top.    Garnish with optionals if desired.

 


    Notes :  My husband and our friend Kris loves this recipe.  It's hearty and filling.  This is a meal in itself.   Serve with baked tortilla chips and salsa.   Estupendo!
