1 quart lowfat - 1 gram fat
Mayonnaise Dressing
1 cup ketchup
1/2 medium red and green bell peppers
4 stalks celery
1/2 small red onion
2 sprigs parsley
2 teaspoons pimento -- optional
2 large egg -- hard boiled
3 small sweet pickle
Blend the Mayo and ketchup in a food processor, blender, or by hand until well
mixed. Chop all the other ingredients very fine, or blend in a food processor.
Combine all the ingredients, mix well. Best served after it has chilled overnight.
Notes: This recipe makes a lot, but
stores for a while. It takes some work, but it's worth it.....not your everyday
Thousand. I like the Lowfat Mayo Dressing, it has a better taste for this. This will serve approx 45 at 2 tablespoons each.
